Harira Recipe (one pot!)
A hearty Moroccan soup that can be prepared in a single pot. The prep time is only 10-15 minutes, but the soup does need to simmer for about 2 hours total, so take that into account! It’s great for a number of reasons, including:
It’s flexible! Use any meat, use any type of noodles.
It’s a way to use garbanzo beans. We have some lying around and I don’t have many recipes for them.

Uses a single pot. So easy to clean!
Budget friendly! All the ingredients are very affordable.
Ingredients
1 pound meat - ground lamb or beef
1/2 teaspoon turmeric
1/2 TSP cinnamon
2 TBSP butter
4 TBSP cilantro, chopped
4 TBSP parsley, chopped
1 14oz can diced tomatoes
1 onion, chopped
1/4 cup red lentils, rinsed
2 14oz cans garbanzo beans, with the liquid
1 15oz can diced tomatoes
Salt, pepper, cayenne and paprika to taste
4 small shallots, peeled and roughly chopped
1/4 cup uncooked soup noodles
Directions
Put meat, turmeric, cinnamon, butter, parsley and cilantro into a pot and cook over medium heat for 5 minutes, stirring constantly.
Add tomatoes, cook for another 10 minutes.
Add lentils, garbanzo beans, and 2 1/2 cups water. Season with salt, pepper, cayenne, and paprika to taste.
Bring mixture to a boil, then lower the heat and simmer for 1 1/2 hours.
Add shallots, simmer for 25 minutes more.
Add noodles, cook until the noodles have cooked through (varies by type)
Serve in steaming bowls!
